May is National Salsa Month
In the summertime, I love being able to go out to the garden and pick fresh tomatoes & peppers for this recipe.
However, until our crops are ready for harvesting, I rely on my local grocery store for my produce. And last week they had peppers on sale so I thought making some salsa would be a good idea. It is such a healthy snack and all the colors mixed together look so pretty, not to mention, it tastes delicious!

Here is how I make it ~
What you need:
2 large seeded Tomatoes
1 Green Pepper
1 Red Pepper
1 Yellow Pepper
1 Orange Pepper
1/2 Red Onion
2 Green Onion
Lime & Lemon Juice
Salt & Pepper
Note: If you want some more spice, feel free to add any other types of peppers. My kids prefer the less spicy version.
Finely chop everything. In bowl, whisk together lemon & lime juice, olive oil, splash of white vinegar & salt & pepper. (I don’t have the exact measurements for the juices and olive oil, you don’t want the veggies to be swimming, just add enough for flavor.) Mix in bowl with peppers & tomatoes.
Serve with tortilla chips & ENJOY 😀

P.S. For lunch, I add some chopped avocado to the salsa and enjoy with tortilla chips. Very yummy 🙂
