Loaded Potato Soup ~ Crock Pot Potato Soup Recipe

Loaded Creamy Potato Soup is one of my favorite soups.  The following is the recipe for making it in the crock pot but the same recipe can be used for quicker stove top cooking.    (I’ve also added leftover mashed potatoes to this recipe….yum!)

Mmmm, loaded potato soup!

Ingredients for Potato Soup:  

Garlic, Onions, Carrots & Celery

5 cups peeled, diced potatoes
⅓ cup chopped celery
⅓ cup finely chopped onion
1/4 cup finely chopped carrot
1 cup diced ham
2 Garlic gloves chopped
Dash of Rosemary & Thyme
5 cups water
6 chicken bouillon cubes
 2 t. pepper
5 T. flour
5 T. butter
2 cups milk
1 cup shredded colby cheese

Put potatoes, water, vegetables, ham, bouillon and seasonings in the crock pot and stir. (The milk, flour & butter will be added later)  Cook on low for 6-8 hours, check tenderness of potatoes. (I cook on high for part of the time)
Once the potatoes are tender, in a saucepan melt the butter , add flour and slowly add milk, stirring constantly over med heat until thick.
Stir mixture into crockpot.
Cook 15-20 minutes more and add 1 cup (or more ) shredded cheese.
Garnish with chopped green onion, bacon & cheese

Talk about a delicious comfort food!
